Wheat Germ Pancakes
Yield 6 servings
______________________2 c. all purpose flour
______________________½ c. whole wheat flour
______________________3 T. sugar
______________________2 tsp. baking powder
______________________1 tsp. baking soda
______________________½ c. toasted wheat germ
______________________2 c. lowfat buttermilk
______________________1 T. canola oil
_______________1. Combine flours, wheat germ, sugar, baking powder and baking soda in a large mixing bowl.
_______________2. In another bowl, beat the egg and mix it with the buttermilk. Add the wet ingredients to the dry ingredients and combine.
_______________3. Heat a little of the oil on medium heat in a skillet or large pan and pour the batter into the pan to make pancakes. (1/4 c. of batter) Adjust the amount of batter as needed to fit your pan.
_______________4. When pancakes start to bubble on top, flip them over with a turner.
_______________5. Repeat until all batter is used.
Serve and eat!
